R&D Baking Technologist

About the position

This position will report to the Director of R&D and will be responsible for developing gluten free bakery products (from written concept/bench top to full scale production) for one of the leaders in the gluten-free industry. Science of Baking and large-scale product development experience are required.


Duties and Responsibilities

  • Formulate and develop new products from concept to commercialization to meet customer expectations on nutritional profile, ingredient statement, and product attributes.
  • Conceptualize bakery products and develop product prototypes for evaluation.
  • Assist with the sourcing and evaluation of ingredients.
  • Lead cost-saving initiatives through ingredient, product, and process optimization.
  • Drive innovation through continuous improvement.
  • Work with the R&D Product Manager to develop and document the process for the manufacture of new products.
  • Provide technical support at plant trials and new product start-ups with operation team.
  • Develop finished product and process specifications.
  • Work with QA to ensure food safety and regulatory requirements are met.
  • Works with cross-functional teams (Sales, Operations, Purchasing, Engineering, Quality, etc.) on projects requiring product development support.
  • Arrange for completed products/samples to be shipped to customers.
  • Maintain records of formulations, ingredient testing and prototyping


Qualifications

  • Must have bench top and production scale experience in a wide range of baking applications.
  • Must have a 'Trouble Shooting' mind frame.
  • A passionate interest in food, specifically baked goods, with a high degree of professional commitment to the food industry.
  • Considerable knowledge of ingredients and their functions used in gluten free baking.
  • Flexibility and ability to professionally handle multiple projects simultaneously while addressing aggressive timelines for completion.
  • Knowledge of HACCP, GMP's and SQF.
  • Ability to establish and maintain professional and effective working relationships with all employees.
  • Knowledge of food production equipment and processing at the plant level.
  • Project management skills.


Knowledge, Skills & Abilities

  • Three years' experience in developing/manufacturing bakery products.
  • Proficient in Microsoft Office Suite.
  • Preferred Culinary or B.S degree in Food Science, Baking Science, or job experience demonstrating similar level
